Paying homage to the majestic mountains of Courchevel and the waters of the Floating City, gastronomy fans can experience the culinary prowess of three Michelin-starred Chef Norbert Niederkofler at Aman Le Mélézin, France (20 and 21 February 2023) and Aman Venice, in his native Italy, on select dates from March to October 2023. Bringing his renowned ingenuity to the two destinations, Chef Norbert will offer a unique six-course tasting menu comprising locally sourced ingredients.
Each tasting menu will draw on the ‘Cook the Mountain’ philosophy, which originated from his St. Hubertus restaurant at Aman Partner Hotel, Rosa Alpina in the Dolomites. Receiving much acclaim over 27 years, awards include three Michelin stars and a Michelin green star for his commitment to environmental cooking. In Chef Norbert’s role as Aman’s Consultant Chef, he continues to impart expert guidance across all 34 properties as part of the brand’s on-going commitment to a more sustainable future.
An Evening with Chef Norbert at Aman Venice will see guests experience a one-off tasting menu focused around ‘Cook the Lagoon’, the fine dining concept developed for the hotel by the acclaimed chef, drawing from his original ‘Cook the Mountain’ philosophy, and the hotel’s Executive Chef Matteo Panfilio. With Chef Norbert in residence at the Venetian palazzo, dishes will include nettle cappelletti pasta in a seaweed and mushroom broth, created using the finest local ingredients. Those seeking to extend their time at Aman Venice, have the option to combine the event with a two-night stay including daily breakfast and a cocktail and cicchetti in the hotel’s iconic bar.
Visitors to Aman Venice unable to attend An Evening with Chef Norbert can enjoy a seasonal ‘Cook the Lagoon’ menu, served in the hotel’s Blue Room every evening from Tuesday to Saturday throughout the year.
